May - June at Villa Appalaccia

It is mid May and sniffings and sippings  in our tasting room are in full swing.  Many new visitors have found their way to Villa Appalaccia this spring and mingled with  our “regulars” around the bar or sharing  a bottle of wine on the deck. Also four-legged friends have found Villa Appalaccia ‘s hospitality to be recommended,  
In the cellar the final fermentation is taking place in the red wines. This fermentation, called malolactic (ML) fermentation converts malic acid to lactic acid which results in a softer acid structure. We expect that  the 2016 vintage red wines will be rich in fruit and have a nice tannin/acid balance. However, the wines will not  be bottled until the spring.
 In contrast to the red wines, ML  fermentation is prevented in the white wines as to retain their crispness and bright mouth-feel. During May the “Allegra” effervescent white Prosecco style wine will be bottled and then ready to be released in time for 4th of July celebrations. We have also produced a blend of Vermentino and Malvasia. This wine is  reminiscent of Simpatico fermented to dryness. It will also be available early July.
